For those fans of Worcestershire sauce and Coca Cola you better give thanks to Indonesia now because without giving nutmeg and clove to the world both these products wouldn't taste the same !

Indeed you will be surprised to know that many spices we take for granted now were once more valuable commodities than gold ! Wars were fought over them, colonial lines drawn up, in fact even Manhattan Island was swapped for an island rich in nutmeg !

Indonesia was at the heart of the spice trade with Maluku or the Spice Islands as it is referred to, having a rich supply of indigenous spices such as nutmeg, mace and clove. It is these trading links with India, Middle East and later Portuguese and Dutch tradesmen which have heavily influenced food in the region setting it apart from cuisine in other South East Asian countries and making it a fascinating culinary trip for any budding foodies out there !

Mie Aceh (Acehnese Curried Noodles) from Northern Sumatra is a great example of a dish which includes many of the influences from the spice trade.

A soupy minced lamb noodle dish served in warungs (small cafes) or street food stalls, it is an explosion of flavours with a lovely combination of star anise, cardamon, clove and cinnamon along with fiery chillies and curry powder.

It's perfect comfort food for the endless rainy days of the monsoon season which I guess makes it fit right in here in the UK !

It's fast approaching the end of the Muslim fasting month of Ramadan. After a month of observing the strict daily abstenance of food during daylight hours, Muslims all over the world will be coming together to celebrate Eid Mubarak, or in Indonesia otherwise known as Lebaran or Idul Fitri.

Cities which for the rest of the year are packed full to the brim with people, become virtual ghost towns as millions of people, typically unskilled workers; maids, labourers etc vacate the main urban areas to return back to their hometowns to share in the celebrations with their families. Roads all across the country become jam packed with buses, cars and motorcycles as people frantically rush home to be with their loved ones. In fact it is one of the largest temporary global human migrations. In 2013 over 30 million Indonesians travelled back to their hometowns during the festivities.

The wonderful thing about Idul Fitri of which we in the West should take note, is the complete lack of commercialisation which surrounds the celebrations. In the weeks that lead up to Lebaran, television is dominated by programmes communicating the true meaning of Ramadan. Commercials, rather than enticing us to spend beyond our means on material goods, are focussed on maintaining good health during the fasting month. Children do not wait expectantly for a sack full of toys, but instead look forward to perhaps receiving some new clothes to see them through the coming year. Of course being a Muslim festival, there is no consumption of alcohol which often brings out the worst in human behaviour and during Christmas is often the cause of so many unceremonious relationship breakdowns. Whilst food is at the centre of the festivities, one gets the feeling that it doesn't have the same connotations with over consumption and greed as it does in the West. No, Idul Fitri still remains to this day a very simple, humble religious festival where younger generations ask for forgiveness from their elders and everyone enjoys those few precious days of being together before once again going their separate ways for the other 360 days of the year.

For many millions of disadvantaged people in Indonesia, Lebaran may be the only time of the year that meat is eaten. For others who are more fortunate, it is a time to indulge in the most celebratory of Indonesian dishes. Amongst these is Beef Rendang which is often eaten during religious celebrations, wedding ceremonies etc. This beautiful dish was recently voted the world's most delicious dish in an on-line poll. Cubes of beef slow cooked in coconut milk and spices until reduced, are left to caramelise in the remaining liquid until dry and succulent.

Why not try Mama Eti's Beef Rendang spice paste kit to savour the flavours of this wonderful dish ? It is available through our web site www.mamaeti.com or from one of the stockists below. We have kept strictly to the traditional recipe which will be eaten across Indonesia this Idul Fitri. Yes it takes around 2 hours to cook, but hey if you can spare the time, the wait is is well worth every minute !

And if you want to go that extra mile and dive head first into Indonesian culture, why not serve it on banana leaf (can be found at any good specialist asian store such as Wing Yip) with steamed rice and Mama Eti's Chilli & Kaffir Lime Leaf Sambal. All that leaves you to do, is roll up the sleeve of your right arm (it is considered rude to eat with your left hand in Indonesia) and eat amongst friends with your fingers !!!
